In the dictionary, hookah is defined as a pipe with a long, flexible middle eastern stem, so arranged that the smoke is cooled by being made to pass through water.

A hooka is made up of a hollow glass vase, a vertical stem topped with a clay, ceramic, metal or pyrex bowl, and one or more hoses coming out of the middle eastern stem. The base is usually filled with water but can sometimes be filled with milk, wine, or juice. Ice is also sometimes put in the water to make the smoke taste cooler.

When the smoker sucks on the hose, the smoke is drawn through the pipe down into the water, which cools and filters it. Here is where the peaceful bubbling sound comes in, and why the hookah is sometimes called a hubbly-bubbly. It is very relaxing to most people and it sets the mood for the smokers.
